Enchiladas

Ingredients :

  • 450 gr. of wheat flour
  • 200 gr of minced meat (stir fried in 4 tablespoons of oil with 1 garlic clove, green pepper and ½ an onion)
  • 200 gr of boiled rice
  • 1/2 litre of frying oil
  • 1/2 cabbage
  • white vinegar
  • 3 ripe tomatoes

Preparation :

1 - Prepare a dough in a deep bowl mixing the flour and a pinch of salt adding very water little by little while incorporating and mixing by hand till the dough become rather soft

2 - Mix the boiled rice and the stir-fried minced meat in a bowl and add little chilly hot pepper to your taste to make it slightly hot.

3 - Take a small portion on dough, put it on a plastic foil and press it till it takes a thin flat round shape. Put a tablespoon of mixture in the middle and fold it on a half a moon shape, sealing the edges with the help a fork.

4- Deep fry it in oil till it becomes golden. Cut to the cabbage into small threads and dice the tomatoes in small cubes, add olive oil and vinegar to your taste.
