Preparation:1- In a saute pan cook the meat in the orange juice with the garlic and a small amount of the onions and peppers until the vegetables are tender. 2- Remove the pan from the heat and remove the meat to cool. Strain and retain the sauce and return it to the pan. Place the tortillas into the strained sauce. When they are soft break them into a small pieces and again return to sauce. 3- When the meat has cooled crumble it into small pieces using the hands or a small knife. 4- In a oiled saute pan lightly fry the remaining onions and green pepper with the cumbled meat. Add the tomatoes towards the end of the sauteing. Mix in the soaked tortillas, retaining any orange juice, and the mint (yerba buena). 5 - Cook on low for 15 minutes tossing gentlely, adding remaining orange juice as needed to keep well moistened. Serve immediately. Notes:Serves 6 to 8 people |
