Nacatamales


Ingredients

Dough ingredientes : 3 lb (1350 gr) of maize flour 4 cup of butter 3 medium onions 3 green pepper (chiltomas) 1 garlic clove 2 cup of bitter orange juice 25 mint leaves (yerbabuena) Stuffing ingredientes : 1/2 lb (225 gr) of beacon (50 pieces) 4 lb (1800 gr) of pig ribs (75 pieces) 1 lb (450 gr) of rice 1/2 cup of vinegar 25 tomatoes slice 25 rodajas de papa slice 25 green pepper slice 25 onion slice 25 mint leaves (hierba buena) 1 garlic clove 4 teaspoon of achiote (optional) Sal and pepper Thin rope Silver paper 30 cm width greaseproof paper (wax paper) 30 cm width

Preparation

Dough Dilute the maize flour with water to make a soft dough ; in a whish frie garlic, onion, green pepper wth the orange juice, then add it with the dough If the dough is too hard add milk. Stuffing 1 - wash well the rice and put it in the water during 1 hour. Add vinegar, achote, mashed garlic, salt, pepper to marinade the meat (about 1 hour). 2 - Take off the bacon and the ribs and prepare all the ingradient on the table leaving them separate 3 - Put the wax paper over the silver paper, put one full tablespoon of dough and over it one tablespoon of rice, 1 rib, 1 piece of beacon, one slice of potato, tomatoe, onion, pepper and a leave of mint (hierba buena). 4 - Now you have to close the packaging* using the silver paper leaving the wax paper inside. Close well, the water doesn't get in. Repeat for all the nacatamales. 5 - Fill a pot of water and tut the nacatamales to boil during 3 hours. From time to time put the nacatamele from up to the deepest place of the pot to ave uniform cook. *Take two opposite tips of the silver paper and refold. Shake to arrange the ingredients and close the other two tips. Notes: For 25 nacatamales
